Ogden City Mayor Ben Nadolski sits down with Isaac Vialpando, the visionary behind O-Town Kitchen, Ogden’sfirst incubator kitchen housed inside the former James Madison Elementary. Isaac shares how a late-night idea dreamed up in a New York dorm room turned into a full-circle return to Ogden, and why creating affordable, licensedcommercial kitchen space is a game-changer for local food entrepreneurs. They break down what an incubator kitchen actually is (and what makes O-Town Kitchen more than a “cook-and-go” commissary): mentorship, business support, connections to branding help through Weber State, and a growing pathway to retail accounts.
Isaac also talks about his earlier mission-driven food business, the barriers that hold small food businesses back, and his bigger vision for Ogden as an even stronger “foodie town”, where culture, community, and opportunity are always on the menu.
