Julia sits down with Patric Matysiewski of Sauvage Spectrum where they discuss the exciting projects happening at Sauvage Spectrum in Palisade, Colorado. Palisade is part of Colorado’s largest wine growing region, the Grand Valley AVA. This region is one of the world’s highest altitude vineyard areas, most vineyards here are at around 4,500 feet above sea level.
Having worked together on numerous wine projects in the past, winemaker Patric Matysiewski and grape grower Kaibab Sauvage formed “Sauvage Spectrum” in 2019 with the goal to create a new breed of estate winery. They are planting a great diversity of grape varieties(including lesser-known vines such as Teroldego), with “nominal interference” in the cellar, allowing them to showcase and further explore what makes Colorado wine so special.
