Today on our episode #445 of All in the Industry, Shari Bayer's guest is Maksut Aşkar, a Turkish chef and restaurateur with several restaurant concepts, including Neolokal, a one Michelin star and Green star restaurant, which has also earned 3 Knives from The Best Chef Awards, located within the cultural institution SALT Galata in Istanbul, Turkey, known modernizing Anatolian cuisine through sustainable practices, creative interpretation, and deep respect for Turkey’s rich culinary heritage.
Additionally, Maksut's other concepts and partnerships, include Foxy, a bistro focused on local and natural wines; Todos los Dias, an all-day bistro; Kontuar Pera, a wood-fired based restaurant, all located in Istanbul; and O – Anatolian Cafe by Maksut Askar at the Fenix art museum in Rotterdam, Netherlands.
